What are Bolitas de Coco?
Bolitas de coco are small, soft coconut balls that are a popular sweet treat in Costa Rica. They are made from a mixture of sweetened condensed milk, coconut, and galletas Maria or Graham crackers. Bolitas de coco are typically rolled in powdered sugar and served chilled.
Ingredients
- 1 (14 ounce) can sweetened condensed milk
- 1 cup unsweetened shredded coconut
- 1/2 cup galletas Maria or Graham crackers, crushed
- Powdered sugar, for rolling
Instructions
1.In a medium bowl, combine the sweetened condensed milk, coconut, and galletas Maria or Graham crackers. Mix well until the ingredients are combined.
2.Roll the mixture into 1-inch balls. Place the balls on a baking sheet lined with parchment paper.
3.Chill the balls in the refrigerator for at least 2 hours, or overnight.
4.Roll the balls in powdered sugar before serving.
